DRESSING
1/4 C fresh lemon juice
2 Tbsp Dijon mustard
1 Tbsp minced shallot
1 crushed garlic clove
1/2 tsp salt
Fresh grnd blk pepper
SALAD
2 large bunches of Tuscan kale - shredded
12 large Brussels sprouts- shredded
1/2 C olive oil
1/3 C almonds - chopped
1 C grated Parmesan cheese or cheese of choice

Directions:
Directions:
Blend all the dressing ingredients and set aside.
Mix the kale and sprouts on a bowl.
Toast the almonds in 1 Tbsp olive oil.
Transfer nuts to a paper towel and lightly salt.
Slowly whisk the remaining oil into the lemon dressing mix.
Season with salt and pepper.

Combine the dressing, nuts, cheese and kale mix.

Tips:
Karen sometimes adds other greens like endive, radicchio, or spinach.
She'll use salad crunch mix or squash seeds if she doesn't have almonds - they all taste good!
Change it up and add fruit - strawberries, mangoes, or dried cranberries.
If short on time, poppy seed dressing works well.

Karen served this salad at a family get-together a few years ago and it was sure a hit! Upon request, she shared her recipe with me. Harry and I often make this for dinner. We add a side of meat such as duck breast and it is complete! Thanks Karen!!
