English muffins
Boiled potatoes
Red onions
Fresh spinach
Fresh cilantro
6 eggs
1 ripe, firm avocado

Prepared hollandaise sauce

Directions:
Directions:
Chop and fry the potatoes over medium heat to make hashbrowns.
Cook continually while preparing the Benny's.
Slice the onion and saute the rounds in a pan.

Boil water to poach the eggs.
Meanwhile, slice the avocado and prepare the sauce.
Poach the eggs.
Toast the muffins.

Arrange the toasted muffins 2 halves to a plate.
Top with sauted onions, avocado slices and fresh spinach.
Add the eggs and drizzle sauce over the top.
Top each one with a little chopped cilantro.
Add hashbrowns and serve immediately.

Tips:
If you want to use packaged hollindaise sauce, Steph suggest International Delight brand.
Boil the potatoes the day before.
Use a non-stick pan or add some coconut oil or other fat to the pan for frying.
