Ingredients:  
1 tsp. parsley flakes
2/3 c. chopped onions
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp. dried basil

1/2# ground beef, browned and drained
3 c. broth (chicken/vegetable)
4 c. diced potatoes

3 T. butter
1/4 c. flour
1/4 tsp. pepper
1 1/2 c. milk
8 oz. American cheese

1/4 c. sour cream, optional

Directions:
Directions:
Saute 1st 5 ingredients in 1 T. butter. Add ground beef, broth and potatoes, bring to boil, then simmer 10-12 minutes.
In skillet melt butter, then slowly add flour and pepper, stirring constrantly until bubbly.Add to soup mixture and bring to a boil for 2 minutes to thicken. Add milk and cheese and cook over low heat just til cheese is melted. Can top bowls with sour cream.
