1 C shortening
1 C sugar
1 C brown sugar, packed
2 eggs
1 tsp vanilla
1 ½ C flour
1 tsp salt
1 tsp baking soda
3 C oatmeal
1 C chopped walnuts

Directions:
Directions:
• Preheat oven to 350°.
• ream shortening and sugars. To cream, mix ingredients together with an electric mixer until the batter is light
and fluffy.
• Add eggs and vanilla to sugar mixture.
• Sift flour, baking soda and salt.
• Fold into creamed mixture.
• Add oatmeal and walnuts. To mix well, combine with you hands after stirring. This allows loose ingredients at
the bottom of the bowl to mix in thoroughly. Make sure you wash your hand first and take off all jewelry.
• Place a small amount of flour onto clean hands to make cookie balls. Roll the dough into small balls and
place on greased cookie sheet.
• Bake for 10-12 minutes.
• Allow cookies to set on cookie sheet for only 2 or 3 minutes, then remove quickly and allow to cool on
cooling racks. This allows the cookies to set up but prevents them from continuing to cook on the hot cookie
sheet.
Yields: 6 dozen
