3 lbs beef stew meat
1/2 cup flour
1 tbsp curry powder
2 cloves garlic, minced
1 cup raisins
4 apples, sliced into 1" cubes (divided use)
1 onion, diced
2 tsp salt
1/2 tsp pepper
1 can beef broth

Cooked rice (about 4 cups)

Directions:

Mix flour and curry powder in a plastic bag. Add the beef and coat well.

Put the the rest of the ingredients into a crock pot (using only half the apples) and stir to blend.

Cook on low for 8 hours.

Before serving, add additional curry powder to taste, and also add the other half of the apples.

Serve over rice.

This recipe is from my mother's 1975 copy of "Crock Pot Cooking" which I rescued from a box going to Goodwill. I have made it many times and love the sweet and spicy flavor. Adding the fresh apples at the end gives it a nice crunchiness.

I've also canned it and love just popping open a jar and serving it over rice.
