2 lb. Lean ground beef
6 Saltine crackers, crushed
2 Eggs, lightly beaten
2 Green onions, finely chopped
1/2 C. Milk
1/4 C. Snipped parsley
1/4 C. Finely chopped celery
1 Tsp. Soy sauce
1 Tsp. Worcestershire sauce
1/4 Tsp. Salt
1/8 Tsp. Black pepper
Dash garlic powder
1/4 C. Catsup
3 - 4 Slices bacon, slightly cooked
16 Small red potatoes
1 Green sweet pepper, sliced

Pre-heat oven to 325º.

To make the meat leaf: Combine the beef, crackers, eggs, onions, milk, parsley, celery, soy sauce,
Worcestershire sauce, salt, pepper, and garlic powder. Add more milk if texture is too stiff. To shape the loaf: Pat meat mixture into 8 x 4-inch baking dish, then invert into a shallow baking dish.

To make the topping: Cover the top of the meat with catsup and bacon slices.

To make the vegetables: surround the meat loaf with whole potatoes. Cover with foil. Bake in 325º for 1 hour.

Uncover; carefully; carefully spoon off the drippings in the pan. Add the green sweet pepper on top of the potatoes, Bake at 325º oven, uncovered, for 30 to 40 minutes. Arrange Meat and vegetables on a platter.
