1 lb fruit cut up (strawberries, or peaches, etc)
1/2c water
2Tbsp lemon juice
1 envelope Knox gelatin powder
1tsp vanilla
pinch salt
1Tbsp butter
Erythritol and/or stevia to taste [I use about 2/3c erythritol and 2/3c stevia in the raw].

Directions:
Directions:
Sprinkle gelatin powder over lemon juice in a small bowl.
Simmer fruit/water in a saucepan over low heat about 20 minutes. Remove from heat. Stir in gelatin/lemon juice. Add sweetener to taste. Put in a clean jar, refrigerate for up to 4 weeks.
