2 c flour
1 c sugar
1½ tsp baking powder
1 tsp salt
½ tsp baking soda
¾ c orange juice
2 T shortening
1 T grated orange peel
1 egg well beaten
1½ c cranberries, coarsely chopped
½ c chopped nuts

Directions:
Directions:
Preheat oven to 350º. Mix flour, sugar, baking powder, salt, and baking soda in a mixing bowl. Stir in orange juice, shortening, orange peel and egg. Mix well. Stir in cranberries and nuts. Spread evenly in loaf pan. Coat pan with shortening and flour and bake for 55 minutes. Stick toothpick in to see if done. Cool 15 minutes and remove from pan.
