2 lbs dried whole white beans
1 tsp salt
2-4 Tbsp brown sugar
1/2 C molasses
1 Tbsp mustard or 1 tsp dry mustard
1/2 to 3/4 lb salt pork or bacon slices
1 onion

Directions:
Directions:
Wash and cover the beans with water - soak over night.
Put the drained beans in a pot, cover with fresh water and simmer until the skins burst (1 1/2 - 2 hours).
Quarter the onion and place in the bottom of the bean pot with the pork or bacon.
Add the beans - with the water.
Combine the salt, brown sugar, molasses and mustard with 1 cup of boiling water and pour over the beans.

Cover the pot and bake in a low (275 F) oven or crock pot for 6 - 8 hours.
Do not stir.
Add water as needed to keep the beans moist.
Remove the cover for the last 1/2 hour of cooking.

My mom gave me this recipe more than 30 years ago! This makes a great meal, even on a budget! It is especially easy if you have a crock pot to cook it in.
