2lbs. Red potatoes, washed and cut into 1" cubes
1Tbl Dried Basil
1Tbl Thyme
1/2C Olive Oil
1C Parmesan Chees
2tsp seasoned salt
Pepper to taste

Directions:
Directions:
Preheat oven 425
Pace potatoes in a casserole dish (or I have used a jelly roll pan) and drizzle with olive oil. Add spices to coat potatoes. Stir potatoes around.
Place half of the Parmesan cheese on the potatoes and place in the oven for 30 min.
Check potatoes, stir (add more olive oil if the potatoes are getting dry) and add remaining Parmesan cheese. Return to oven for 30 min. or until they are roasted to the desired color and texture.
Let stand for 3 min. and serve warm
