11 oz bittersweet chocolate, broken up
5 ½ oz butter
2 Tbsp Cointreau or orange juice
6 eggs, separated
1 egg white (use 3 Tbsp all whites)
1 cup sugar or sugar/stevia blend
2 tsp vanilla

Directions:
Directions:
1. Preheat oven to 350º.
2. Grease a 10-inch round spring form pan (okay to use smaller size) and line bottom with parchment paper.
3. Place chocolate and butter in a microwave-safe dish. Melt slowly and carefully using a low setting.
4. Once melted, add liqueur or orange juice and vanilla. Set aside in a warm place.
5. Beat the 6 egg yolks together with ½ cup of the sugar (or stevia) in a bowl until mixture turns lemon-yellow.
6. In another bowl, beat the 7 egg whites together; when soft peaks form, add another ½ cup sugar (or stevia) and beat until medium peaks form.
7. Fold egg yolk mixture into chocolate; then fold in meringue, ⅓ at a time.
8. Pour batter into prepared pan and bake for 20 minutes.
9. Reduce oven temperature to 300º and bake for another 20 minutes.
10. Reduce oven temperature to 250º and bake for another 50 minutes, or until a toothpick comes out clean.
11. Allow cake to cool in pan and then remove.

1 pint (2 cups) blueberries, raspberries, or a combination of both
1 pint (2 cups) strawberries
1 Tbsp (to desired taste) sugar or sugar/stevia blend
1 Tbsp (to desired taste) Cointreau or orange juice
1-2 Tbsp confectioner's sugar to dust top of cake
Whipped cream

1. Dust cake with confectioner's sugar.
2. Clean and cut berries to desired size.
3. Mix sugar and orange liqueur or juice into measuring cup or glass.
4. Toss berries and sugar mixture into a bowl and allow to sit for 10 minutes or longer.
5. Serve cake with berries and whipped cream.
