2 celery ribs
2 cans diced tomatoes with green peppers and onion
3 garlic gloves, minced
2 tsp. creole seasoning
1 tsp sugar
2 Tbsp flat leaf parsley
2 green onions, thinly sliced
1 tsp hot sauce

Directions:
Directions:
Saute chopped celery ribs in 2 Tbsp olive oil in sauce pan ver medium heat 3-4 minutes.
Stir in 2 cans diced tomatoes, garlic, seasoning, and sugar. Reduce heat to low;simmer, stirring occasionally 20 minutes.
Stir in parsley, onions and hot sauce. Makes 3 cups.

I add cooked shrimp and use over slow cooked grits.
