1 8 oz pkg elbow macaroni (rice noodles for gluten free)
1/4 cup butter
1/4 cup all purpose flour (oat or rice flour for gluten free)
1 tsp salt
1/8 tsp pepper
2 cups milk
2 cups shredded cheese

Directions:
Directions:
Preheat oven to 375. Cook macaroni as package directs; drain. Melt butter in saucepan; remove from heat. Stir in flour, salt, and pepper until smooth. Gradually stir in milk and bring to a boil, stirring. Reduce heat and simmer 1 minute. Remove from heat and stir in 1 cup cheese and macaroni. Pour into 2 quart casserole and sprinkle remaining cheese over top. Bake 15-20 minutes or until cheese is golden brown.
