1 package Filo Dough, Thawed
1 cup crumbled Feta cheese
2 egg yolks
1 cup hot clarified butter

Directions:
Directions:
Lay Filo on a dry surface and cut in half lengthwise in half to make two 4 -inch by 14 1/2-nch rectangles. Wrap filo in plastic wrap until ready to use. In a mixing bowl, combine feta cheese and egg yolks and portion into teaspoon amounts. Using one piece of filo at time, fold in half lengthwise to make a 2-inch by 14 1/2 inch rectangle. Brush butter over filo, especially the edges. Place one piece of feta filling at one end of filo and fold like a flag. Place tiropites on a parchment paper-lined baking sheet and brush butter over top and edges. Bake at 375 until golden brown, about 15 minutes.
