2 Tbsp Lime Juice (Fresh)
2 Tbsp cooking Oil
1 Large Garlic Clove, minced
1 1/2 Tsp ground Cumin
1 Tsp Salt
1/2 to 1 Tsp ground Chili
1 Tbsp chopped Cilantro
1 1/2 Lbs Chicken Thighs skinless and boneless
3 large Bell Peppers cut in strips. Use one each Green, Red and Yellow
1 Red Onion sliced thin
2 Avocados, peeled seeded and sliced

1. In large shallow bowl, combine Lime Juice, Oil, Garlic, Cumin, Salt, Chili and Cilantro (if used). Mix together and add the Chicken Thighs and allow to marinate for 30 minutes.

2. Heat large skillet on medium-high heat until smoking. Add a drizzle of olive oil to lightly coat bottom of pan. Sear the Chicken on both sides until golden, charred and cooked through about 8 minute per side depending on size of Thigh, flip a couple of times to get even char. Transfer to warm plate and tent with foil to rest.

3. Add Peppers, Onions to Skillet with a little extra oil if needed, cook until Onion is soft and Peppers are slightly charred. Season with salt and pepper.

4. Slice Chicken into strips and serve with warm Tortillas, Sliced Avocado, Cilantro or Salsa
