1 cup finely chopped toasted pecans
1/2 cup room temp. vegan butter
1 cup flour
3 tbsp sugar
1 tsp vanilla extract
Topping
1 cup powdered sugar (for coating)

Directions:
Directions:
Finely chop the pecans or put in food processor and pulse till coarsely chopped.Preheat the oven to 350.Put the chopped pecans on a cookie sheet. Bake for 8 min.Let cool and set aside.Mix all ingredients in a bowl except the powdered sugar. Cool the dough in the frig for 30 min.Line the cookie sheet with parchment paper.Roll the dough into 1 inch sized balls.Bake for 15 min.Let cool about 2 min than coat in powdered sugar.Let cool another 25 min than coat again.Makes approx. dozen and a half.
