1 T butter or oil
2 eggs
3T.salsa(hot or mild as you prefer)
2 oz. shredded cheddar cheese
Directions:
Directions:
Spray a heavy skillet with cooking spray and set it over med. heat .
Add butter or oil.
Crack eggs into skillet.
Turn down and fry 4 to 5 min.
While eggs are frying warm salsa in microwave.
When are done as you like them sprinkle cheese evenly over top and add a tsp. or 2 of water to skillet and cover for a min. or two.
Transfer to a plate and top with salsa.
