1 tablespoon olive oil
2 teaspoons garlic, minced
3 cups heavy cream
3 egg yolks
¾ cup fresh grated or shredded Parmesan cheese
salt and pepper to taste

In a sauce pan, heat the olive oil over medium heat. Add garlic, and cook for one minute, stirring constantly. Do not burn the garlic.

Add the heavy cream and bring to a simmer.

In a separate bowl add the egg yolks. While whisking egg yolks, ladle in 1½ cup of the hot heavy cream ½ a cup at a time to slowly heat up the egg yolks.

Add the hot heavy cream and egg yolk mixture back to the sauce pot, and cook over medium low heat stirring constantly. Cook it until the sauce thickens. Reduce the heat to low.

Add in half of the Parmesan cheese, and stir until cheese melts. Add in the other half of Parmesan and stir until cheese melts.

Season with salt and pepper and serve with your favorite pasta.
