Caramel Icing

1/2 c butter
1 c sugar
2 eggs, separated
2 1/4 c flour
2 tsp baking powder
1/2 tsp salt
1 c strong cold coffee
3/4 c walnuts
1 tsp vanilla
raisins,optional

Preheat oven 350º
Grease and flour 8"x12" pan


Cream butter and sugar. Add egg yolks.
In a separate bowl mix flour, baking powder and salt. Add to cream mixture.
Mix in coffee and vanilla.

Beat whites of eggs and fold into batter.
Add walnuts and raisins if using.

1 tsp butter
1 1/4 c cream or evaporated milk
1 tsp vanilla

Cook sugar and cream until it forms a soft ball in cold water.(234 degrees).

Add butter and vanilla, remove from heat.

Let stand without stirring until slightly cool.

Beat until right consistency.
