2 packages yeast
1 tablespoon sugar (out of the 1/4 cup)
1/4 cup warm water
Combine yeast, sugar, water. Let set 5 minutes till bubbly. Set aside
1/4. cup sugar
1/3 cup Crisco
1- 1/2 cup scalded milk
1 teaspoon salt
2 eggs (beaten)
4-1/2 cups flour.

Pour hot milk in large bowl, melt Crisco in this, and then cool to lukewarm. Add sugar, yeast mixture and eggs, then salt and 1 cup of flour at a time beating after each addition. Let this mixture rise until double. Turn out on floured board knead and add just enough flour until workable, roll 1/2" thick, Cut and let rise. Fry in hot oil 400 degrees. Dip in glaze.

1/2 cup boiling water
1/2 teaspoon vanilla
Only heat the water and then add to the sugar and vanilla stir well.

Please note mom did not turn this out on a floured surface and knead at all. She just left in bowl to rise. I think this was part of the reason her doughnuts so light.
