1 package (3 ounces) strawberry jello
1 cup sugar
1 heaping Tablespoon cornstarch
1/2 cup lemon juice
1 1/2 cups water
1 quart of good fresh strawberries stemmed, washed drained, and sliced if large berries.

Directions:
Directions:
In a medium saucepan combine jello, sugar and cornstarch. Stir in water and lemon juice
and cook till bubbles and thickens.
Cover and let cook.
Add berries and pour into baked pie shells.
Top with whipped cream.
Makes enough for 2 pies.

When Mom, Dad, Beth and I were on the vacation to California, Oregon and all parts in between
we stopped at a little restaurant that had the best pie. It was basically this filling with a cream cheese
layer on the bottom. To do a cream cheese layer I use 8 ounces cream cheese, 1 cup of eagle brand milk sweetened condensed milk and 4 Tablespoons lemon juice.
Mix this well and chill till set up before putting in pie crust.
