Ingredients: 2 oz red food coloring 3 Tablespoons Nestle Quick Mix 1/2 cup crisco 1 stick butter softened 1 1/2 cups sugar 2 eggs
2 1/4 cups flour 1 teaspoon salt 1 tsp soda 1 t vanilla 1 Tablespoon vinegar 1 cup buttermilk

Directions: |
Directions:Make a paste of the Nestle Quick Mix and red food coloring. (Note: You can usually find red velvet emulsion with cake decorating supplies and it is much easier to use than the food coloring mixture if available.) Mix until creamy Crisco, butter, sugar and eggs. Add red paste and stir well.
Sift together flour, salt and soda Mix vanilla, buttermilk and vinegar together.
Add Flour mixture and buttermilk mixture alternately to the butter mixture
About 1/2 mixture each addition. Pour mixture into prepared pans. Bake at 350 degrees 25-30 minutes until cake springs back when touched and toothpick comes out clean. Cool ten minutes on a rack and the run a knife around edge and turn out of pan and cool completely. |

Notes: Old fashioned Icing for Red Velvet Cake
2 Tablespoons flour 1 cup of whole milk 1/4 cup of crisco 1 stick of butter softened 3/4-1 cup granulated Sugar (I would save the 1/4 cup to use as a thickening agent needed when mixing) 1 teaspoon vanilla
Over medium low heat cook milk and flour until thickened, cool completely. With an electric mixer beat until completely crisco butter 3/4 sugar and 1 teaspoon vanilla then stir in milk mixture and beat until well incorporated. Mother's notes "Beat until fluffy. This takes a while." Mixture needs to emulsify or it will begin to separate.
Cream Cheese Icing if you prefer
1 8 ounce cream cheese softened to room temperature 1 stick butter softened to room temperature 1 box of powdered sugar - 4 Cups 1 teaspoon vanilla
Mix will with mixture. Be sure to use room temp cream cheese and butter. Do not attempt to soften in the microwave it will effect your results.
If above is too stiff to spread on cake add a small amount, I'd say 1 Tablespoons milk at a time until just at spreading consistency.
