2/3 cup cocoa
3 cups sugar
1/2 teaspoon salt
1 1/2 cups milk
1/4 cup butter
1 teaspoon vanilla

Directions:
Directions:
Combine cocoa, sugar, and salt in a large 3 quart saucepan.
Add milk and stir bringing to a boil over medium heat.
Continue to boil without stirring until thermometer reads
232 degrees or mixture dropped into cold water makes a small soft ball.
Remove from heat. Add butter and vanilla.
Do not stir at this point!
Allow to cool at room temperature until thermometer reads 110 degrees.
Beat mixture by hand with a wooded spoon or an electric mixer until the fudge
thickness and loses some of its gloss.
Add nuts if desired and pour out into a greased 8 X 8 pan.
