BATTER
1 C all-purpose flour
1/2 C milk
1/2 C water
1/4 C baking powder
1 tsp salt

TARTAR SAUCE
1 C mayonnaise
2 Tbsp lemon juice
2-3 Tbsp finely chopped dill pickle
2 tsp dill weed finely chopped
1/4 tsp pepper

Directions:

BATTER
Whisk the batter ingredients smooth in a bowl.
Dip fish into the batter (allow excess to drip off).
Deep fry until golden brown.

SAUCE
In a medium size bowl, combine mayo, lemon juice, chopped dill pickles and dill weed, and pepper to taste.
Stir until thoroughly combined.
Chill in refrigerator.

Tips:
Add freshly cracked black pepper or lemon pepper to the batter mix for an extra kick. I recently found a spice called Inca Fire Salt that has become my favourite for spicing things up.
You can deep fry the fish in a deep fryer or in a frying pan. I often fry the fish in coconut oil in a wok style pan.

I added this recipe because it is something we use often. I also wanted to add it for Marcel since he asked if I had one for a couple pieces of cod. He said he doesn't use recipes much and when he does need one he just goes on line to find it. Only thing is - the last batter recipe he found on line turned out to be pancake batter! This recipe is for you Marcel!!
