4 c. rhubarb OR red currants
1/2 c. water
6 c. saskatoons, crushed
2 T. frozen Orange Juice concentrate
1 Pkg pectin crystals
6 c. sugar

Pure saskatoon jam:
6 c. saskatoons, crushed
2 T. frozen Orange Juice Concentrate OR 1/4 c. lemon juice
1 pkg pectin crystals
5 c. sugar

Directions:
Directions:
Cook rhubarb/red currants and water together in a large, heavy pot for 5 min. Meanwhile, crush saskatoons and add orange juice concentrate and pectin powder. Measure out the sugar into a separate container.
Add saskatoon mixture to the cooked rhubarb, bring to a boil stirring often, then add sugar all at once.
Boil 1 minute, stirring constantly, and ladle into jars.
Makes 5-500mL jars

Note: Pure saskatoon jam spits pretty bad while boiling. Use a long-handled wooden spoon.
