2 c flour (I use 1:1 whole wheat and white flour)
1 t. baking powder
1 heaped tsp salt
3 eggs, separated
3 T. oil
1/2 c. water
3/4 - 1 c. milk or thin yogurt

For Spinach pancakes:
1 1/2 c. fresh spinach, chopped fine
OR 1 c. cpd cooked spinach
OR 1 1/2 c. chard leaves, chopped fine

Fruit compote; or berry/maple syrup
excellent with runny Heyer 12 jelly

Directions:
Directions:
Separate eggs, putting whites into a narrow high bowl.
Mix flour, salt and baking powder together in a large bowl. Mix egg yolks, wanter and milk together and stir into dry ingredients. The batter should be runny. (For Spinach pancakes, stir in chopped Spinach at this stage).
Beat egg whites til stiff and fold into batter.
Heat oil in frying pan, and fry pancakes til golden on each side.

Plain Omelettes can be made as one large pancake
Spinach pancakes cook better when two smaller oval pancakes are fried at a time.
