Directions:
In a medium bowl, mix flour, salt, baking powder and herbs. Melt butter, pour over flour mixture and work into the dough. Add the water and mix into a smooth dough. Divide into 4 pieces.
Preheat oven to 400º F.
Lightly grease 4 large cookie sheets. Place one piece of dough on a cookie sheet and shape into a lengthwise rectangle. Roll it out on the baking sheet, dusting with flour if needed. The thinner the better. Always roll from the center to the edge, so the thickness stays even throughout the dough.
Sprinkle the dough with whatever toppings you like - more herbs, sriracha, dried chopped tomato, coarse salt, garlic, parmesan cheese,...then use the rolling pin to press these into the surface of the dough so they stay on. Using a sharp knife or pizza cutter, slice the dough into cracker shapes - squares, triangles or rectangles.
Bake them about 8 minutes. 375º F Convect to do 2 trays at a time. To dry them, bake an extra 15 min at 275º Convect.
