Ingredients: 2 lbs Asparagus 1 bunch of leeks ( around 3 leeks) 4 large zucchini 4 stalks celery Half a cup of mixed beans (try navy beans and lima beans) 10 cups good quality filtered water 3/4 Herbamere salt to taste. ( or sea salt)

Directions:Wash the beans and put them in cold water to soak.
Wash and rinse leeks very well and chop into small rounds. Immerse asparagus in warm salty water and wash well, rinse well,and chop. Wash zucchini and cut in small rounds (no need to peel) Wash and peel celery and cut in small 2 inch pieces.
Place the chopped leek into a large pot and saute in a little avocado oil, until tender. Add the remaining ingredients and saute until tender. Sprinkle with salt. Rinse the beans and add to pot. Add 10-15 cups water Cook for approximately 45 minutes until beans are tender.
Blend with immersion blender for a smooth silky soup. |

Notes: This is a very satisfying silky soup, with very little calories. This soup helps keep the glycemic level low. Did you know asparagus helps fight UTI infections? It has less sodium per tsp. than regular salt.
