3 c. Quark (can be made with 2 L. milk)
1 1/2 c. icing sugar
3 T. unflavored gelatin (or 3 pkgs)
1 3/4 c. water, divided
1 1/2 c. whipping cream
4 c. fresh or half-frozen raspberries

Base:
2 c. graham wafer crumbs
2 T. sugar
1/4 c. melted butter

Directions:
Directions:
Graham wafer crust: Stir the sugar into graham wafer crumbs, then stir in melted butter. Press mixture into a 9x13" cake pan or 10" round Torte pan. Chill.

In a large bowl, stir icing sugar into quark til smooth.
Prepare gelatin: put 3/4 c. water in a 3 c. bowl. Sprinkle with gelatin powder. Let stand 5 min to soften. Heat 1 c. water to boiling, then whisk into the softened gelatin. Stir gelatin into the quark.
Whip cream til stiff.
Fold raspberries into the quark, then fold in the whipped cream.
Pour over the chilled crust, Chill til solid.

Using frozen raspberries makes the quark set right away. Can also be made without the crust. Chill in the bowl, or pour into individual dessert dishes to set. Makes 4 L (16 c.)
