Dough:
1Tbsp yeast mixed with 1/4 c. warm water and 1 t. sugar
6 - 6 1/2 c. flour
3 Tbsp sugar
2 rounded tsp salt
2 c. warm milk
1/2 c. butter, melted

Filling:
4 c. ground nuts ( 350g)
1 1/2 med. apples, grated
1 lemon, (1/3 c. juice) and rind
1 small orange (1/3 c juice) with rind
3.4 c. brown sugar
1/2 c. whipping cream

Directions:
Directions:
Prepare yeast mixture.
Melt butter, add milk and heat to good and warm.
Put flour in a large bowl, mix in salt and sugar. Add milk mixture. Mix to a soft dough and knead well - 10 min or so. Let rise til double.
Grease 2 9x13" cake pans
Divide dough in half and roll each piece to a large rectangle, about 18 inches long and 12 inches wide.
Spread 1/2 the filling on each piece, leaving 1 cm edge on one length. Brush this bare edge with milk or water.
Roll up the dough, then cut each roll into 12 pieces. fit into cake pans. Let rise for 40 minutes, brush with milk, and bake at 350º F for 30 - 35 min til golden.
Brush immediately with a mixture of 2 tbsp water and 2 tbsp icing sugar. Let cool in the pan.

This is Auntie Rose's recipe. You can use 800g Zopf dough too, for one 9x13 pan.
