SHRIMP and CHICKEN GUMBO
Bubba Gump Shrimp Company Recipe

2 pounds chicken breast halves, skinned
2 quarts water
1/2 cup all-purpose flour
2 cups chopped onion
1 3/4 cups chopped celery
1 1/2 cups chopped green pepper
1/2 cup chopped green onions
4 cloves garlic, minced
2 tablespoons vegetable oil
1 1/2 teaspoons dried thyme
1 teaspoon dried oregano
1/2 teaspoon pepper
3 bay leaves
1 (14 1/2 oz.) chicken broth
1 (8 oz.) can tomato paste
1/2 pound smoked sausage, sliced
1 pound unpeeled medium fresh shrimp
hot cooked rice

Directions:
Combine the chicken and water in a Dutch oven and bring to a boil. Reduce heat, and simmer, uncovered, for about 45 minutes or until the chicken is done. Remove the chicken from the broth. Set aside to cool. Strain the broth and transfer to a large container. Set aside. Remove the bones and chop the chicken into pieces. Set aside.

Place the flour in a 15x10x1 inch jelly roll pan. Bake at 350 degrees for 45 minutes to 1 hour or until very brown, stirring every 15 minutes. Set aside.

Cook the onion and the next 4 ingredients in oil in a dutch oven over medium-high heat, stirring constantly, until tender. Add browned flour, thyme, and the next three ingredients, stirring until smooth. Add the reserved broth, chicken, canned broth, tomato paste, and sausage. Bring to a boil. Reduce heat, and simmer, uncovered, for 1 hour.

Peel and devein shrimp. Add them to the broth mixture. Cover and simmer for 10 minutes or until the shrimp turn pink. Remove and discard the bay leaves. Serve over rice and garnish with green onions. Make 4 1/2 quarts.
