2.5 lb (1 kg) beef roast
2-4 cloves garlic
1 tbsp prepared horseradish
1 tbsp fresh rosemary (or 1 tsp dried rosemary)
3 tbsp extra virgin olive oil
1 tsp kosher salt
1/2 tsp black pepper

Preheat oven to 350º F.

In a small bowl, combine the garlic, horseradish, rosemary, olive oil, salt and pepper until it forms a paste.

Add meat to a roasting pan and spread the mixture on top and sides. Add a splash of water or beef stock to the bottom of the pan.

Cook for about 25 minutes per pound, or to desired doneness (1 hour for medium rare, 1.5 hours for medium, 2 hours for well done).

Remove from oven and let rest 15 minutes before carving.
