3 cups grated zucchini
3 cups sugar
4 eggs
1 ½ cups vegetable oil
3 cups flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 ½ cinnamon
1 cup chopped pecans

Directions:
Directions:
Preheat oven to 300ºF.

1) Butter and flour 3 9" round cake pans

2) Mix wet ingredients in large bowl. In second mix dry ingredients.
Fold wet into dry.

3) Divide among the 3 pans and bake for 1 ½ hours

4) Let cool completely then ice with cream cheese pecan icing.

1 stick butter, room temperature
8 oz cream cheese, room temperature
1 cup pecans
1 box powdered sugar
1 tsp vanilla

Directions:
Directions:
1) cream together butter, cream cheese, and vanilla
2) add powder sugar ¼ box at a time until creamy
3) stir in pecans
