1 16 oz package angel hair pasta, cooked and drained

1/4 cup olive oil
6 cloves garlic, minced
1 lb fresh asparagus spears, trimmed and chopped in 1" pieces
2 cups cherry tomatoes, halved
2 cups mushrooms, sliced
1 14-oz can chicken broth
1 tsp dried dill weed
black pepper to taste

2 avocados, mashed
1/2 lime, juiced
2 cloves garlic, minced

1 cup Parmesan cheese, grated

Directions:
Directions:
Cook the pasta and drain, then add 1 tbsp olive oil to keep it from getting sticky.

Saute the garlic in the remaining olive oil for 1-2 minutes. Add the asparagus, tomatoes, mushrooms and broth. Cook uncovered for 10 minutes or until the asparagus is tender.

Make the avocado mixture in a separate bowl.

Place the pasta in a large bowl and toss in the asparagus/tomato mixture. Season with dill and pepper and serve the pasta with a dollop of avocado and a sprinkling of Parmesan cheese.

So good! I found this in March, 2009 on AllRecipes.com when looking for something that used asparagus and avocado. Who knew there was a perfect recipe out there!
