1 stick butter (room temperature)
1 cup flour and 2 tbsp. flour
1 cup confectioner's sugar (1/4 cup and 3/4 cup)
Lemon rind of 1 lemon
2 tbsp. fresh lemon juice
2 eggs, lightly beaten
1 cup granulated sugar
2 tsp. baking powder
tsp. vanilla flavoring
1 tsp. milk
1 tbsp. butter (room temperature)

Preheat oven to 350. Combine stick of butter, 1 cup flour and 1/4 cup of confectioner's sugar. Pat dough into bottom of a 9 inch square cake pan. Bake in preheated oven for 15 minutes. Remove and cool for 10-15 minutes.

Combine lemon juice, lemon rind, eggs, granulated sugar, 2 tbsp. flour and baking powder. Spread over the cooled crust and return to the oven for 25 minutes. Remove and cool.

Frosting: Combine remaining confectioner's sugar (3/4 cup) with vanilla, 1 tbsp. butter and milk. Spread over baked mixture in pan.

*Tip: Use a wet spoon or spatula to spread the icing. Let icing set before cutting into squares. ENJOY!
