4 medium chicken breasts halves, cut into bite-sized chunks
1 bag frozen chopped onion
1 bag frozen chopped green pepper
2 tsp jarred minced garlic
1 can low salt chicken stock
2 cans cream of chicken soup
24oz salsa verde
Steamed brown rice
optional & to taste: cajun seasoning
smoked paprika
ground cloves
salt & pepper

Directions:
Directions:
Sauté onion, green pepper, and garlic until all liquid is gone. Add raw chicken chunks and continue to sauté until chicken is cooked through. Add seasonings, salsa, and broth. Stir in condensed chicken soup until smooth. Simmer on low heat until everything is warm. (Be careful to remove chicken and keep it warm separately if it appears to be done before you finish adding all the ingredients.) If it needs thickening, add a bit of corn starch mixed w/ water.

Serve over steamed brown rice.

This is a "creamy" option to most other Mexican-type chicken/salsa recipes. Especially warming on a cool evening.
