4 cups cold cooked rice
1 egg
1 small onion chopped
1/2 cup sliced mushrooms
1 cup chopped cabbage
1/2 cup green peas
1/2 cup thinly sliced or shredded carrots
1 cup diced ham
2 tablespoons olive oil
1 - 2 tablespoons soy sauce.

Directions:

Scramble egg in a small amount of the oil. Remove from pan and reserve. Satue ham, onion, mushrooms, cabbage, peas and carrots until crisp-tender. Add rice and reserved egg and stir until heated through. Season with soy sauce.

May substitute any vegetables that sound good. Also can be made with shrimp or chicken. A good way to use left-overs!
