2 cups dates, cut into small pieces
¾ cup sugar
¾ cups water
Pinch of salt
½ cup chopped nuts
Zest from 1 orange or lemon or 2 teaspoons orange or lemon juice (optional)

Mix dates, sugar, water, and salt in a saucepan. Cook until thick stirring constantly. Add nuts and zest, if using. Cool

1 cup soft shortening
2 cup brown sugar
2 eggs
½ cup water, sour milk, or buttermilk
1 teaspoon vanilla
3 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt
⅛ teaspoon cinnamon

Directions:
Directions:
Heat oven to 400°F. Mix shortening, sugar, and eggs until fluffy. Stir in water and vanilla. Sift together flour, baking soda, salt, and cinnamon. Stir into butter mixture. Drop with teaspoon onto an ungreased baking sheet. Place ½ teaspoon of date filling on dough. Cover with a ½ teaspoon of dough. Bake 10 to 12 minutes.
