Crustless Quiche

1 container cottage cheese
1 bunch of broccoli, steamed and chopped
3/4 cup grated cheddar cheese
1/4 cup roasted red peppers, chopped (I used from a jar)
4 eggs, beaten
3 tbsp plain bread crumbs
3 tbsp Parmesan cheese

Mix all til well blended

Pour into 9" pie plate

Bake 350 for 45 minutes or until centre is set (peek at bottom if you use a glass pie plate)

Let stand 10 minutes before cutting into 6 or 8

I add some crumbled feta to the mix and put a little extra grated checker over the top.

I have used the flavoured grated cheeses you buy in the package, Cajun and Texmex and is yummy too. You can also change the broccoli and peppers to try different combinations. Easy, fast and yummy!
