1½ cups brown sugar
½ cup butter
1 egg
1 cup sour cream
1 tsp baking soda
1 tsp vanilla extract
2 cups flour
2 cups diced rhubarb

Topping:
1 pkg of strawberry jello
Enough sugar to make a cup of topping

Mix together well

Directions:
Directions:
Combine ingredients in the order listed in a medium bowl with an electric mixer, mixing well.
Pour into a greased 9X13 pan, and sprinkle topping over unbaked cake.
Bake 30-35 minutes at 350º.
If there are any dry spots in the topping after baking, sprinkle lightly with water and broil for 3-5 minutes until bubbly.
Let cool and enjoy!
