3 qt. water
1 bunch green onions, chopped
3 garlic cloves, chopped
2 celery stalks, chopped
6 c. assortment of fresh veggies, diced
1/2 c. quinoa
2 tsp. cumin
1 tsp. paprika
1 tsp. salt
1/4 tsp. ground bayleaf
1 Tbsp. vegan chicken-like seasoning
1 Tbsp. dried parsley
1 tsp. red curry paste (opt.)
1 Tbsp. olive oil (opt.)

Combine water, onion, garlic, and celery with water in a large pot. Bring to a simmer. Cook about five minutes. Add veggies, quinoa, and seasonings. (I like to use squash, green beans, and cabbage. Whatever you like.) Simmer another 15 minutes. Turn off heat, and stir in final ingredients if used.
