2 cups flour
2 tbsp sugar
pinch of salt
2-3 cups milk
4-6 eggs
2 tsp vanilla
2 tbsp butter, melted

Directions:

1. In a medium bowl, combine all dry ingredients.
2. In a separate bowl, combine all wet ingredients, except butter.
3. Mix wet ingredients into the dry ingredients. You may need to add additional milk/eggs to get to the correct consistency.
4. Mix melted butter into the mixture.
5. Ideally, let the mixture rest in the fridge over night. This will help remove the chunks in the batter. However, you can also just use it right away.
6. Heat a crepe pan or cast iron frying pan over medium heat. Melt butter onto the pan.
7. Add just enough batter to get a thin coating over the entire pan. Lift pan and tilt in a circle until the batter covers the entire pan.
8. Cook for about 30 seconds on both sides. Don't overcook!

Crepes can be used for any occasion/meal. Lemon juice, powdered sugar, Nutella, whipped cream, chocolate sauce, and/or fruit are all great options for dessert crepes. Pesto chicken, ham and cheese, and other savory combinations are also incredible!
