1½ c. brown rice
1½ tsp. salt
¾ pound cooked ham
1 medium sized green pepper
1 (17 oz.) can whole-kernel corn, drained
½ c. salad oil
⅓ c. taco sauce
2 tbsp. cider vinegar
½ tsp. sugar

About 1 hour before serving or early in day:
1. In 3 quart saucepan over high heat, heat brown rice, salt, and 3¾ cups water to boiling. Reduce heat to low; stir rice. Cover and simmer about 45 minutes or until rice is tender and all liquid is absorbed.
2. Meanwhile, dice and green pepper. In large bowl, mix ham, green pepper, corn, salad oil, taco sauce, vinegar, and sugar.
3. When rice is cooked, add to bowl with ham mixture; toss to mix well. Serve salad at room temperature or cover and refrigerate to serve chilled later.
Makes 12 accompaniment or 6 main dish servings.
