1 cup light corn syrup
1 cup sugar
2 tbsp butter
1 tsp vanilla
3 eggs, well beaten
1 cup pecan pieces
1 9-inch pie shell

Directions:
Directions:
Preheat oven to 350°.

In a heavy saucepan, combine corn syrup, sugar, butter and vanilla. Bring mixture to a boil, stirring constantly. Remove from heat and cool in refrigerator for 30 minutes.

When mixture has cooled, add beaten eggs, mixing well.

Place pecans in unbaked pie shell. Carefully pour syrup mixture over pecans.

Bake for 1 hour or until center is set.

Luby's is a buffet restaurant in Dallas, Texas. They are famous for their pies, and one year in the mid-90's the local paper published their amazing pecan recipe.
