3 eggs
cup vegetable oil
cup apple sauce
2 cups white sugar
3 cups grated zucchini
2 tsp vanilla
3 cups flour
3 tsp ground cinnamon
1 tsp baking soda
tsp baking powder
1 tsp salt
cup chopped walnuts

Directions:
Directions:
Preheat oven to 325. Grease and flour two 8x4 inch loaf pans.

In a large bowl, beat eggs until light and frothy.
Mix in oil and sugar.
Add remaining ingredients and stir well.

Divide batter into pans.

Bake for 60-70 minutes.

August 2009: Delicious! Moist and yummy.

Anyone who knows me well, knows that I hate zucchini. This is the only way I will eat it.
