MEATLOAF1-LB. GROUND BEEF CHUCK
1-LB. LEAN GROUND PORK
3-STRIPS BACON ( CUT UP INTO SMALL BITS)
1/2- CUP EVAPORATED MILK
1-EGG SLIGHTLY BEATEN
2-TSP. SALT
1-CUP DRIED BREAD CRUMBS (TOAST)
1/2-CUP CHOPPED ONIONS
/2-CUP CHOPPED GREEN BELL PEPPERS


SAUCE
1/2-CUP BBQ SAUCE 1-TBS. WORCESTERSHIRE SAUCE
1/2- CUP KETCHUP 1-TSP. CHILI POWDER
1/2- CUP VINEGAR 1- TBS BROWN SUGAR OR MOLASSES)

FIRE UP A CHIMNEY OF CHARCOAL TO DO THE COOKING WHILE YOU PREPARE THE MEATLOAF,
LINE A 12” DUTCH OVEN WITH HEAVY DUTY AL. FOIL.
IN A LARGE BOWL MIX TOGETHER ALL THE INGREDIENTS. MIX LIGHTLY. SHAPE THE MEAT INTO 8 SMALLER LOAFS AND PLACE IN THE DUTCH OVEN. AND COVER WITH THE SAUCE (RECIPE BELOW)

MIX ALL INGREDIENTS, BRING TO A BOIL IN A SAUCEPAN AND SIMMER TO THICKEN.


COOK WITH 9 CHARCOALS ON THE BOTTOM AND 15 CHARCOAL ON TOP, CHECK IN 10 MINUTES AND ABOUT THAT TIME UNTIL THE MEATLOAF IS BROWN AND COOKED THOROUGHLY, TURN THE LID AND POT ¼ TURN EACH TIME YOU CHECK THE DISH. YOU WILL HAVE TO ADJUST THE AMOUNT OF CHARCOAL AS YOU COOK TO FINISH THE MEAT LOAF. COOK FOR 45-1 HOUR.
EACH TIME YOU CHECK THE MEATLOAF BAST WITH THE SAUCE MIXTURE IN THE DUTCH OVEN TO KEEP THE MEATLOAF MOIST.
COOK UNTIL THE MEAT LOAF STARTS TO FORM CRUSTY BROWN SPOTS AND THE MEATLOAF IS DONE INSIDE,
