1 pound Certified Angus Beef ® top round steak, cut into small strips 1/2-inch by 1/2-inch by 1-inch
12 ounces bow-tie (farfalle) pasta

2 teaspoons kosher salt
1 teaspoon freshly cracked pepper
2 tablespoons vegetable oil
8 ounces fresh sliced mushrooms - optional
1 red bell pepper, seeded and chopped - optional
1 pound fresh asparagus, cut into 1 1/2-inch pieces

1 (15-ounce) jar light Alfredo sauce or homemade Alfredo (recipe in this cookbook)
1/2 cup grated Parmesan cheese

Prepare pasta according to package directions, reserving 3/4 cup pasta water.

Meanwhile, season beef with salt and pepper. Heat vegetable oil in large sauté pan; brown beef over medium-high heat for 2 to 3 minutes, remove. Add red bell pepper and mushrooms to pan; sauté 3 to 5 minutes or until mushrooms are tender. Stir in asparagus and pasta.

Stir in Alfredo sauce, Parmesan and reserved pasta water. Bring just to a boil, reduce heat and simmer 2 to 3 minutes, stirring occasionally. Stir in beef and season with additional salt and pepper to taste.
