4 egg whites with pinch of salt
1 cup fine granulated sugar
¼ tsp cream of tartar
½ tsp vanilla

Custard Filling:
4 egg yokes
4 tablespoons sugar
4 tablespoons lemon juice ( 4 tablespoons orange juice and 1 tablespoon of lemon juice)
½ heavy whipped cream

The Base:
Beat egg whites until very, very stiff. Beat in cream of tartar and sugar, a spoonful at at time Beat in vanilla, drop by drop and continue beating for a few minutes.
Spread in a buttered 9 inch pie plate, making the edges higher than the center, like a pie crust for the filling.

The Custard Filling:
Beat the 4 egg yokes until thick with the sugar and juice. Cook over boiling water, whisking constantly until thick (170º).

Let cool and spread on pie base, cover with whipped unsweetened heavy cream. Let stand for several hours or overnight in refrigerator. Serve with fruit on top.
