1/2 pound crab apples
water
sugar (super fine)
lemon

wash crab apples, remove stalks and cut off bottoms and any bad parts

put apples in a saucepan and cover with water, bring to a boil and simmer for 30 min.

strain the pulp, leave it overnight

measure the juice and add the sugar to every 4 cups of juice add 3 cups of sugar. squeeze the lemon and add to the juice and sugar. boil the jelly (skim off the white froth that forms o the surface). once the jelly starts to thicken test it every couple min on the back of the spoon if it sets, its ready. pour into jars and seal tightly (seal when still slightly warm). store in cool, dark, and dry place.
