2 Slightly Beaten Eggs
2 tsp. Sugar
¼ tsp. Salt
1 cup Milk
1 cup Flour
1 tbsp Lemon Extract
Powdered Sugar

Directions:
Directions:
Add sugar to slightly beaten eggs. Add milk and lemon extract. Sift flour before measuring. In separate bowl, mix flour and salt together. Add to egg mixture and beat until smooth (should be about as thickness of whip cream). Heat iron in oil. Then dip hot iron batter (use a shallow dish deep enough to come to the top of the iron. They cook REALLY FAST, remove from iron, cool on brown paper (this helps remove any external oil. Dust with powder sugar.
